Lingkan Reang
Soak cashews in warm water for 15 minutes and blend into a fine puree.
Heat oil in a pressure cooker, add whole spices, onions, and green chilies, saute for 2 minutes.
Add ginger garlic paste, then saute chicken until seared, add thin coconut milk and salt, and cook for 2 whistles.
Add vegetables, cover, and cook for 1-2 more whistles.
Open the cooker, add cashew paste, and simmer for a few minutes.
Pour in thick coconut milk, garnish with coriander leaves, simmer for 2 minutes, and turn off the heat.
