Combine 1 cup of kuttu (buckwheat) flour with 2 boiled and mashed potatoes, salt, and a pinch of black pepper.
Add a little water and knead into a smooth dough. Let it rest for 10 minutes.
Divide the dough into small balls and roll them into small circles.
Heat oil in a deep pan for frying.
Fry each puri in hot oil until it puffs up and turns golden brown.
Drain excess oil on paper towels and serve hot with yogurt or aloo sabzi.
