Deep-Fried Fries With Cheddar Cheese Recipe

Dissolve cornstarch in water, and set aside for gravy preparation.

Melt butter in a saucepan, add flour, and cook until golden brown (about 5 minutes).

Whisk in chicken broth, bring to a boil, and add half the cornstarch mixture.

For fries, soak cut potatoes in cold water for at least 1 hour, then blot dry.

Deep-fry potatoes at 300°F for 5-8 minutes, then increase heat to 375°F until golden brown.

Toss fries with hot gravy and cheese curds, season, and serve immediately!
