In a large bowl, combine the rolled oats, chopped nuts. Stir well.
In a separate bowl, mix together honey, coconut oil, and vanilla extract. Stir until the oil melts and the mixture is smooth.
Pour the wet mixture over the dry ingredients and toss well.
Spread the granola mixture evenly onto the plate prepared with baking sheet.
Preheat your oven to 350°F (175°C). Bake for about 20-25 minutes.
Once golden and crisp, remove from the oven and allow the granola to cool. Once cooled, mix in dried fruits and serve.
