2 cups rice flour, 1/4 cup peanuts, 2 tbsp sesame seeds, dal, 1 tbsp red chili powder, 1 tbsp cumin, 1-2 chopped green chilies, 1 tbsp ginger, 2 tbsp curry leaves.
In a large bowl, mix rice flour, semolina, dal, curry leaves, and a pinch of hing. Add salt to taste.
Add grated ginger, chopped green chilies, and curry leaves to the dry mix. Stir well.
Slowly add water to form a smooth dough. Knead until soft but firm.
Divide the dough into small portions and roll each into thin, round discs.
Heat oil in a pan and fry the Nippattu until golden brown and crispy. Drain on paper towels.
Serve hot with your favorite chutney or enjoy as a snack. Crispy, spicy, and absolutely irresistible.
