1 cup Urad dal, 1 onion, 2-3 green chilies, 1 tsp ginger, curry leaves, salt, water, oil for frying.
Rinse the Urad dal thoroughly and soak it in water for 4-5 hours or overnight.
Drain the soaked dal. Grind it to a smooth batter, adding a little water at a time. The batter should be thick and fluffy.
To the batter, add chopped onions, green chilies, ginger, curry leaves, and salt. Mix well.
Shape the batter into a ball and make a hole in the center.
Carefully slide the shaped vadas into the hot oil. Fry them in batches, turning them golden and crispy on both sides.
Drain the fried Medhu Vadas on paper towels. Serve them hot with coconut chutney and sambar.
