Season chicken breasts with salt and pepper.
Set up three shallow dishes with flour, beaten egg, and panko crumbs.
Coat chicken in flour, dip in egg and press into panko until fully coated.
Heat oil in a large skillet over medium-high heat.
Fry chicken for 3-4 minutes on each side until golden brown.
Transfer to a paper towel-lined plate to drain excess oil.
