Preheat oven to 425°F (220°C) and toast panko and coconut with oil until golden.
Mix toasted panko with cornstarch and prepare a parchment-lined baking sheet.
Toss chicken pieces in a sauce made from mayonnaise, sweet chili sauce, ginger, and seasonings.
Coat chicken in panko mixture, pressing to adhere, and let sit for 5 minutes.
Bake chicken for 18-20 minutes, flipping halfway, until golden and fully cooked.
Brush with sweet chilli sauce, garnish with scallions and sesame seeds, and serve hot.
