Place oil in a cup and freeze for 1-2 hours, or overnight in the fridge.
In a saucepan, mix black coffee, agar agar powder, and sugar. Heat and simmer until the agar is fully dissolved.
Pour the coffee mixture into a dropper bottle.
Drop the coffee mix into the cold oil, forming caviar that hardens and settles.
Strain the caviar and rinse under cold water.
Store the coffee caviar at room temperature or refrigerate until ready to serve.
