Cut medium or large potatoes in half or quarters.
Boil the potatoes in salted water in a large pot until fork tender.
Mash the cooked potatoes in the same pot. Add butter, sour cream, salt, pepper, and garlic. Taste and adjust salt.
Add some hot potato water to loosen the potatoes. Whip until fluffy, adding more liquid to reach your desired consistency.
Top with roasted garlic, chives, pepper, and a drizzle of melted butter. Serve and enjoy.
