1 cup rice, 2 tbsp butter, 1 tbsp miso paste, 2 cups mushrooms, 1 tbsp olive oil, salt & pepper, 1 sliced green onion, optional soy sauce or sesame seeds.

Toss mushrooms with olive oil, salt & pepper. Roast at 200°C (400°F) for 20 mins until golden.

Cook rice as usual with water or broth for extra flavor. Let rest, then fluff.
