Saute leeks in butter until softened, then toss chicken cubes in flour and cook with leeks.
Season with salt, pepper, and tarragon, add milk and cook until thickened. Cool the filling.
Preheat oven to 220°C (428°F) and prepare a baking tray.
Cut puff pastry into 6 portions, fill, cover, and seal with a fork.
Make a cross on top, brush with egg wash or milk, and bake for 20-25 minutes.
Cool for 5 minutes, plate, and serve.
