Boil broth, onion, carrots, celery, garlic, and salt, simmer for 10 minutes.
Blend softened vegetables with 1 cup broth until smooth; stir back into soup.
Add thyme, bay leaves, and cheese rind, bring to a boil.
Add pasta and simmer until tender, adding chicken in the last 3 minutes.
Remove thyme, bay leaves, and cheese rind before serving.
Garnish with parsley and grated Parmigiano-Reggiano.
