Classic Pastitsio: A Greek Pasta Bake With Creamy Béchamel

Ingredients

Pasta, ground beef or lamb, onion, garlic, tomato paste, canned tomatoes, red wine, béchamel (milk, butter, flour, eggs, nutmeg), Parmesan, and cheddar.

Build Layers

Cook pasta al dente. Sauté onions, garlic, and ground meat, then add tomato paste, canned tomatoes, and red wine. Simmer for 20 minutes.

Make Béchamel

Melt butter, whisk in flour, add milk, then finish with nutmeg and eggs for a silky béchamel.

Make sauce

Heat oil or melt butter, whisk in flour, cook for 1 minute. Add milk in stages, whisking until thickened. Stir in salt, nutmeg, pepper, and Parmesan. Let cool for 10 minutes.

Bake

Layer your cooked pasta in a baking dish, then top with the savory meat sauce and bake it.
