In a skillet, heat oil over medium-high heat.
Add potatoes, season with salt and pepper, and cook until golden and crisp, 10-14 minutes.
Stir in onions and cook until soft and browned, 6-8 minutes.
Whisk eggs with seasoning, pour into the skillet, and stir gently. Cook on low until the bottom is brown, 4-5 minutes.
Use a spatula to loosen, invert onto a plate and slide back into the pan, uncooked-side down. Cook until set, 4-5 minutes.
Garnish with tomato and green onion, serve warm.
