1 cup rice flour, 1/2 cup grated coconut, 1/4 cup jaggery/sugar, 1/2 tsp cardamom, pinch of salt, and dry fruits, saffron.
Start by mixing grated coconut, jaggery, and cardamom powder in a bowl. Set aside.
In a bowl, mix rice flour, salt, and water to make a soft dough. Knead well.
Take a small portion of dough, roll it into a ball, and flatten it to form a small disc.
Place a spoonful of the coconut mixture in the center of the dough disc.
Steam the pithas in a steamer for about 15-20 minutes until fully cooked.
Serve your Chitoi Pithas warm with a cup of tea or as a snack.
