Lingkan Reang
Cook potatoes in salted water for 20-30 minutes, then peel and set aside.
In a frying pan, toast urad dal, pepper, and dry red chili until golden, then grind into a fine powder.
Heat oil in a kadai, add onions, and cook for 2 minutes.
Add potatoes, mix well, and season with salt, fry until golden on all sides.
Stir in the ground masala and cook on low heat for 5 minutes.
Serve hot with rice or roti.
