Slice a whole cauliflower into thick "steaks" (about 1-inch slices) from the center of the head.
Brush each steak with olive oil and season with salt, pepper, paprika, and garlic powder on both sides.
Place the steaks on a baking sheet and roast at 400°F (200°C) for 25-30 minutes until golden and tender.
Mix tahini, lemon juice, garlic, water, and a pinch of salt. Adjust water to get a smooth, creamy consistency.
Stir in cumin or smoked paprika for extra flavor, and adjust salt and lemon to taste for a balanced tang.
Drizzle the roasted cauliflower steaks with the creamy tahini sauce and garnish with fresh parsley or cilantro.
Serve with a side of quinoa or salad for a wholesome, delicious, and plant-based meal.
