Start by draining the ricotta cheese if it’s too wet. Combine the ricotta and mascarpone cheese in a large bowl.
Add powdered sugar, vanilla extract, and cinnamon to the mixture. Stir everything together until it’s perfectly blended.
Fold whipped cream into ricotta mixture then fold in chocolate chips and pistachios of using.
Top with additional chips and crushed pistachios for a pop of color and crunch.
