1 cup all-purpose flour, 2 tbsp sugar, 1 tsp baking powder, 1/2 cup milk, 1 egg, 1/2 tsp vanilla extract, 1/4 cup crushed pineapple, 1 tbsp butter.
In one bowl, mix flour, sugar, baking powder, and salt. In another, whisk milk, egg, vanilla, and melted butter.
Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
Gently fold in the crushed pineapple to the batter.
Heat a non-stick skillet, grease lightly, pour batter, and cook for 2-3 minutes per side until golden brown.
Stack the pancakes on a plate, drizzle with syrup or honey, and serve warm.
