In a bowl, combine 1 ½ cups flour, 1 cup sugar, 1 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 2 beaten eggs, 1/2 cup softened butter, 1/2 cup cooled brewed coffee, and 1 tsp vanilla extract. Mix well.
Whip 1 cup heavy cream, 2 tbsp powdered sugar, and 1 tbsp instant coffee granules until soft peaks form.
In a small bowl, mix 2 tbsp coffee with 2 tbsp sugar and 1 tbsp water. Stir until dissolved.
Pour the batter into a greased cake pan and bake at 350°F (175°C) for 25-30 minutes.
Frost the cake with the remaining coffee cream and refrigerate for an 1 hour.
Once the cake cools, slice it into layers, brush with coffee syrup, and spread coffee cream between each layer. Enjoy your delicious, creamy latte-inspired cake!
