Flour, chia seeds, sugar, baking powder, salt, milk, eggs, melted butter and vanilla extract.
Combine the ingredients and mix well. The batter should be thick and slightly lumpy.
Heat a non-stick pan or griddle over medium heat. Lightly grease with butter or coconut oil.
Pour 1/4 cup of batter onto the pan, spread into a round shape, cook for 2-3 minutes, flip, and cook for another 1-2 minutes until golden.
Fresh fruit (berries, bananas, etc.), Maple syrup or honey, extra chia seeds for garnish.
Chia seeds add texture, grind them for a smoother batter; top with granola, nuts, or cinnamon for extra flavor.
