Heat oil in a kadai and saute finely chopped onions and garlic until translucent.
Add chopped green chillies and tomatoes, cook until the tomatoes are soft and oil separates.
Stir in red chilli powder and mix well.
Add roasted mashed eggplant, seasoning with salt, and saute for 4–5 minutes.
Garnish with chopped coriander leaves.
Serve baingan bharta with phulka, roti, bread, or rice for a delicious meal.
