Lingkan Reang
Cook mutton with salt and turmeric in a pressure cooker for 5 whistles, then simmer for 15 minutes.
Soak cashews in warm water for 30 minutes, then blend into a smooth puree.
Heat oil and ghee, then add seasoning and let it sizzle.
Saute onions, curry leaves, and green chillies until golden.
Add ginger-garlic paste and cook until the raw smell disappears.
Add tomato puree, spice powders, salt, and cooked mutton with its water, and simmer.
Stir in cashew puree, cook for 15-20 minutes.
Finish with coriander leaves.
