Take 1/2 cup broken kerala raw rice, 1 litre full cream milk,1/2 cup water, 3/4 cup sugar, dry fruits and 1/4 teaspoon cardamom powder.
Measure 1/2 cup unakkalari rice and then rinse it well until water is clear then add it to pressure cooker.
In the next step add 2 cups milk, 1/2 cup water and 3/4 cup sugar in the rice until it cooks and whistles once.
Let pressure release naturally then Open and give a quick mix.
Then add 1/4 teaspoon cardamom powder and remaining 2 cups milk to it and let it cook for about 10 minutes.
Cook till the payasam thickens and creamy. Garnish it with some dry fruits and enjoy!
