Heat oil, cook boiled eggs with salt and chili powder until browned, then set aside.
In the same oil, cook potatoes until browned, then drain and set aside.
Add bay leaf, saute onions until golden, then add ginger-garlic paste and cook.
Add tomatoes and cook until mushy, then stir in spice powders.
Pour in water to form a gravy, bring to a boil.
Add fried eggs, potatoes, and water, simmer for 10 minutes.
Serve with rice or roti.
