In a bowl, combine the yeast mixture, remaining sugar, melted butter, whole milk, eggs, and vanilla extract, flour. Mix well and knead for 5-8 minutes until smooth.
Form the dough into a ball, place it in a lightly oiled bowl, and cover with a clean towel or plastic wrap. Let it rise for 1-2 hours.
Once the dough has risen, heat vegetable oil in a large pot or deep fryer to 350°F (175°C).
Turn it out onto a lightly floured surface. Roll it and use a round cutter, cut out in different shapes.
Carefully place the doughnuts into the hot oil in batches, frying for about 2-3 minutes per side or until golden brown.
Heat the milk until it simmers, whisk together egg yolks, sugar, and cornstarch, then slowly temper the eggs with hot milk. Turn off the heat and let it cool down.
For decoration, you can garnish with chopped nuts. Once cooled, fill the donuts with the creamy filling, then serve.
