Rinse and peel the vegetables like carrots or sweet potatoes, to make them easier to cook.
Chop into Bite-Sized Pieces to ensure they cook uniformly.
Heat a tablespoon of olive oil or ghee in a pan over medium heat.
Add finely chopped garlic, ginger, or onions to the pan and saute for 2-3 minutes until they become golden.
Add the chopped vegetables to the pan and stir-fry them for about 5-10 minutes. Cover them with a lid for softer veggies.
Season with salt, pepper, and spices like cumin, turmeric, or garam masala. Serve hot for a delicious, nutritious winter meal.
