Peel and cube the potatoes into bite-sized pieces, then rinse under cold water.
In a pan, heat vegetable oil over medium heat and add the potato cubes.
Cook the potatoes for about 5 minutes, stirring occasionally until they start to brown.
Add soy sauce, sugar, honey, minced garlic, and water to the pan.
Reduce heat to low and simmer the potatoes for 15-20 minutes, stirring occasionally.
Once the potatoes are tender and the sauce has thickened, stir in sesame oil.
Sprinkle with sesame seeds and chopped green onion. Serve warm as a side dish.
