In a large mixing bowl, combine the rolled oats, ground flaxseed (if using), chocolate chips or dried fruit, and salt.
Add the nut butter, honey (or maple syrup), and vanilla extract to the bowl. Mix well until all ingredients are thoroughly combined.
If the mixture is too sticky, refrigerate for about 10 minutes to firm it up slightly, making it easier to roll into balls.
Use your hands to scoop out a small amount of the mixture and roll it into bite-sized balls, about 1 inch in diameter.
Place the energy bites in an airtight container. Store in the refrigerator for up to a week. Enjoy them anytime for a quick energy boost!
