Veggie Upma is a hearty, wholesome, and flavorful South Indian breakfast dish made with semolina (rava) and mixed vegetables. Infused with aromatic spices and tempered with mustard seeds, curry leaves, and green chilies, this one-pot dish is both comforting and satisfying. Ingredients
- 1 cup rava / semolina
- 1 onion finely chopped
- 1/4 cup peas fresh or frozen
- 1 cup mixed vegetables chopped (carrots
- potatoes and beans)
- 2 green chillies chopped
- small ginger grated
- A few curry leaves
- 1 teaspoon urad dal and chana dal
- 1/4 tsp mustard seeds
- Few roasted cashewnuts to garnish
- coriander leaves chopped for garnish
- 1 tablespoon lemon juice
- Salt to taste
Step By Step Guide
Roast The Semolina
Heat a pan and dry roast the rava until it turns a light brown and aromatic. Transfer to a bowl when done and set aside to cool.
Prepare The Tempering
Heat oil or ghee in the same pan and add the mustard seeds, curry leaves and let them splutter. Add urad dal, chana dal and sauté until the dals are golden.
Cook The Veggies
Add the onions, green chillies and ginger. Fry for 4-5 mins until the onions turns golden brown. Add carrots, peas, and beans. Mix well then add about 3 cups water, pinch of salt and bring it to a boil until the vegetables turn soft.
Cook The Upma
Gradually add the roasted rava stirring constantly to avoid lumps. Continue to cook and stir for another 5 mins until the semolina absorbs the water and reaches a fluffy consistency.
Garnish And Serve
Add lemon juice and garnish with coriander leaves. Mix well and serve hot serve hot with vegetable sambhar and coconut chutney.
