Stuffed Brinjal Recipe: Ingredients
Brinjal – 1/2 kg
Coriander powder – 2 tsp
Fennel powder – 1/2 tsp
Red chili powder – 1/2 tsp
Dry mango powder – 1/2 tsp
Green coriander chopped – 3 tbsp
Ginger grated – 1 inch
Crushed Garlic – 5 cloves
Green chili paste – 1 tsp
Garam masala – 1/2 tsp
Chopped onion – 1
Cumin – 1/2 tsp
Turmeric – 1/2 tsp
Asafoetida – 1 pinch
Oil – 4 tbsp
salt – as per taste
Recipe
- To make stuffed brinjal, first wash the brinjal and break its stalk.
- Now cut these brinjals from all four sides and keep them in a plate.
- After this, put 4 spoons of oil in a pan, and when hot, add onion-garlic paste to it.
- After a minute, you also add coriander, red chili, fennel powder, turmeric to it.
- Now add green chilli paste, dry mango powder and salt as per taste and fry it well.
- After cooking this spice for some time, turn off the gas and cool it by putting this spice in a plate.
- Now fill this masala in the cut brinjals with the help of a spoon, similarly prepare all the brinjals.
- Now again heat some more oil in the pan and put the stuffed brinjals in it.
- Now cover the pan with a lid and cook for 10 minutes.
- Keep in mind that you turn it 1-2 times in between, so that it does not burn.
- Now your stuffed brinjal is ready, garnish it with coriander.
- Now serve stuffed brinjal with roti or vegetable.
