Ingredients

  • 1 large and thin sliced onion

  • 2 green chilies

  • 1 cup basmati rice

  • 2 chopped tomatoes

  • 1 tbsp biryani masala or garam masala

  • 1 tsp red chili powder

  • 1 tbsp of ginger-garlic paste

  • 2 cups of water

  • 2 cups mixed vegetables (carrot

  • peas

  • beans

  • potatoes)

  • 3 tbsp of oil or ghee

  • 1/2 cup of yogurt

  • 1 tsp of turmeric powder

  • Whole spices (2 bay leaves

  • 4 cloves

  • 3 cardamoms

  • 1-inch cinnamon)

  • 1/4 cup chopped cilantro and mint leaves

  • Salt to taste

Step By Step Guide

Rinse And Cook The Rice

First, you will rinse the basmati rice and soak in water for about 20 minutes. Then boil water with whole spices and a pinch of salt. Add rice and cook well. Set aside and drain the excess water.

Prepare The Vegetables

Take a pan and heat desi ghee or oil over a medium flame. Now add the sliced onions and toss them until golden brown. Next, add green chilies, chopped tomatoes, and ginger-garlic paste and cook for the next 2 minutes.

Add Spices In The Pan

In the next step, add mixed vegetables, red chili powder, turmeric, salt, and biryani masala. Mix well and cook for 5 minutes. Then stir in mint, cilantro, and yogurt. Cook until the veggies are tender.

Assemble The Biryani

Now take a heavy pot with a thick base. First spread a layer of cooked veggies, then add a layer of rice on top of it. Repeat the procedure. You can also sprinkle some fried onions and mint on top (if desired).

Simmer On Low Flame

Once you have successfully completed the above steps, now cover the pot with a tight lid. Cook on a medium-low flame for about 20-25 minutes so that the flavours blend in perfectly.

Serve

Remove the dish from the pot and serve it with green chutney, onion rings, and drinks (of your choice). Enjoy the spicy veg biryani with your loved ones.
