Ghee Rice is a flavorful South Indian dish made with basmati rice, pure ghee and spices. It’s Perfect for the days when you are craving something flavorful yet light. It’s rich aroma and buttery consistency pairs perfectly with a variety of curries, dal or with plain yogurt.
Ingredients
- 1 cup basmati rice (rinsed & soaked for 15 minutes)
- 2 cups water
- 2 tbsp ghee (clarified butter)
- 1 small onion thinly sliced
- 1 green chili slit (optional)
- 5-6 cashews halved
- 1 tbsp raisins (optional)
- ½ tsp cumin seeds
- 1-inch cinnamon stick
- 2-3 cloves
- 2-3 green cardamoms
- 1 bay leaf
- Salt to taste
Step By Step Guide
Prepare The Aromatics
Heat ghee in a pan and add cashews raisins and saute until it turns golden brown, remove it and keep aside. In the same pan add cumin seeds, cinnamon, cloves, cardamoms, and bay leaf and let them crackle. Add sliced onions and green chili, and saute until it turns golden brown.
Cook The Rice
Drain the soaked rice and add it to the pan. Saute it for 1 to 2 minutes to mix it with ghee and spices Add water and salt and bring it to boil. Cover it and cook on low heat until the rice is fully cooked and fluffy.
Garnish & Serve
Garnish it with roasted cashews and raisins, Serve hot with dal, curry, raita, or a pickle.
