Makke ki Kachori Recipe: Ingredients
- Maize flour (2 bowls)
- Potatoes (4 boiled)
- hot water (1 glass)
- Green chili (2 chopped)
- Ajwain (1 tsp)
- Garam Masala (1/2 tsp)
- Salt (1 tsp)
- Coriander Powder (1 tsp)
- Green coriander leaves (1 tbsp chopped)
Recipe
Knead corn flour in a bowl or dish. Use warm water to knead it. Also add about a drop of desi ghee. While kneading it, keep in mind that the dough has to be tight as it is kneaded for puri. Minimize the use of water. It would be better to knead this dough while kneading it. Now cover it with a cotton cloth or you can also cover it with a plate. Leave this dough for 10 minutes.
On the other hand prepare potato paste. Put boiled potatoes in a bowl. Mash it well first. After this, add some spices like green coriander powder, red chili powder, garam masala, carom seeds and salt to the potatoes. Mix all these well. After this, add finely chopped green chilies and green coriander to this mixture.
Its third step is to fry the kachoris. Make corn flour for this. Extend its big dough with the help of hands, giving it a bowl shape. Fill potato paste in it. Now close its mouth from all sides. If you can make it a little like a puri with your hands, then it is okay, otherwise you can roll it lightly with the help of a rolling pin. Prepare everyone in this way and keep covering them with a cloth.
After this place a big pan on the gas. Put the kachoris in it one by one and fry till they turn red. Fry the maize cakes making them crispy. It can be served with green chutney.
