- 1 bay leaf
- 1 small cinnamon stick (optional)
- 1/2 teaspoon salt (adjust to taste)
- 2 cups water (or vegetable broth for added flavor)
- Fresh coriander leaves chopped (for garnish)
Step By Step Guide
Prepare The Rice
Wash the basmati rice with water until the displaced water is clear. Soak the rice in water for 15-20 minutes and drain.
Temper The Spices
Heat ghee or oil in a pan over medium heat. Add cumin seeds allow them to splutter. Stir in the bay leaf, the cinnamon stick, and cardamom pods (if you are using them). Stir for a few seconds until the aroma needed from the spices is produced.
Cook The Rice
Add the soaked and drained rice to the pan. Slowly mix it around so the rice is coated in the ghee and spices then let it fry for 2-3 minutes. Add 2 cups of water and salt. Mix it gently and let it come to a boil.
Simmer And Cook
Once the water comes to a boil, reduce the heat to low, cover the pan, and let the rice cook for 12-15 minutes. Once the water is absorbed and the rice is cooked, remove from heat and let it sit for 5 minutes before fluffing with a fork.
Garnish And Serve
Garnish with freshly chopped coriander leaves. his is best eaten hot accompanied with dal, curry or any Indian course of your liking.
Pro Tips
To enhance the aroma even more, you can add a few saffron strands soaked in warm water to the rice before cooking. You may also stir in a small piece of ginger and garlic while sautéing the spices you want for some extra flavour. For a vegan version, simply use oil instead of ghee.
