Kanji Vada Recipe: Ingredients

Water – 2 liters (10 glasses), Salt – 2 tsp, Mustard oil – 2 tbsp, Asafoetida – half to ¼ tsp, Turmeric powder – 1 tsp, Red chili powder – 1/2 tsp, yellow or Black mustard – 2 tsp (coarsely ground), Salt – 2 tsp

Ingredients for Vada

Moong Dal – 1/2 cup, Salt – 1/4 tsp or as per taste, Oil – for frying

To make Kanji Vada, first of all you have to take a bowl. Take water in this bowl and keep it on the gas to heat. Also, if you have filtered water, there is no need to boil the water. Along with this, now take a glass or plastic container, wash it thoroughly with hot water and dry it in the sun.

After this, put all the spices like salt, turmeric powder, red chili powder, asafoetida, yellow mustard and oil in a clean and dry container. Also, now add boiled and cooled water to these spices and keep it. After this, you close the lid of the container and keep it for 3 days. Also keep stirring it with a dry and clean spoon 1 time everyday.

After this, taste the kanji on the third day and if the kanji has become slightly sour, then you can drink slightly sour kanji if you want. Along with this, test the water on the fourth day, then the taste of water would have become very sour and very tasty and now your kanji is ready.

Now you have to clean the moong dal by washing it thoroughly with water. Also keep it soaked for 2 hours. After this, remove the extra water from it and put the lentils in the grinder and grind them coarsely. After this, mix salt in the ground pulse and beat it till it swells well.

Heat oil in a pan and put a vada in it and fry the vadas until they turn light brown. After this, take out the fried vadas in a plate and soak these vadas in a little hot water half an hour before serving the kanji. Along with this, after half an hour put kanji in a glass and put 4 to 5 vadas.
