Gujarati Khichdo: On the occasion of Makar Sankranti (or Uttarayan), Khichdo is extremely important. This dish is made using freshly harvested grains. It’s healthful, cosy, and represents the change of seasons, which calls for lighter fare. For those who are unfamiliar, khichdi is an integral part of the Makar Sankranti celebrations in Uttar Pradesh and parts of Bihar.

We have a simple khichdo recipe to add to your Uttarayan celebrations. It is quick and simple to cook, taking about half an hour. Khichdo is made in a similar manner to kheer. Instead of rice, we use thuli, which is boiled with milk and sugar. The meal is topped with dry fruits of your choice, which enhances the flavour.

Gujarati Khichdo: Ingredients

  • 2 cups thuli (cracked wheat)
  • 2 cups sugar
  • 1 liter milk
  • 4 raisins (kishmish)
  • 4 cashew nuts
  • 4 walnuts
  • 4 almonds
  • 1 tbsp ghee

Method

1. In a frying pan, heat the ghee and toast the wheat.

2. Stir until the mixture is light brown in colour.

3. Add the milk and bring to a boil until fully cooked.

4. Add the sugar and continue to stir until the mixture thickens.

5. Garnish with raisins, cashews, walnuts, and almonds if desired. Serve.
