Ginger carrot soup: Ingredients
- diced carrots
- 1 small piece ginger
- 1 onion cut into small pieces
- salt (to taste)
- 1 tsp cumin powder
- 2 teaspoons olive oil
- 2 cups coconut milk
- 4 cloves
- 1 tsp (ground) black pepper
- 1 tsp (ground) cinnamon
- 7 to 8 finely chopped garlic cloves
Keep a pan on the gas. Heat 2 spoons of olive oil in it. Add chopped onions to it. After it turns brown, fry the garlic as well. After this, fry black pepper powder, cinnamon powder, cumin powder and salt according to taste.
Now add chopped carrots and ginger to it. After this, add cloves and fry for 7 to 10 minutes. Add coconut milk to it. Cover it and let it cook well for 15 to 20 minutes. After this turn off the gas. Now you have to blend the soup well with the help of a blender. You can increase or decrease the consistency of the soup according to your taste. Garnish it with coriander leaves and serve it.
