Pepper Chicken is a popular south Indian cuisine made with onions, chillies and other masalas incorporating the flavour of pepper. It is a delicious, aromatic and spicy dish best for monsoon and winters. The recipe is very simple and can be made with the ingredients in the pantry. Pepper chicken can be enjoyed with rice or roti as a meal or can be relished as side dish as well.

The dish also has a Chinese version, but the recipe we are going to depict here is more inclined towards adding masalas and giving it an Indian twist. It can be made gravy or dry according to your preference. Depending upon your choice you can take boneless chicken pieces or bone-in chicken. For instance bone-in chicken resulted more tender and juicy.

To make the recipe more spicy you can add more chillies or red chilli powder. Make sure that the masala nor the onions are over fried. Overcook chicken might turn it hard hard and rubbery. To get the best out of the recipe stick well to the quantity of the added masalas.
Ingredients
- 1 tsp fennel seeds
- 2 onions
- Curry leaves
- 4 green chillies
- 1 tsp ginger-garlic paste
- 1 tsp chilli powder
- 2 tbsp Coriander Powder
- 2 tsp Garam Masala Powder
- Salt to taste
- 2 tbsp Black Pepper
- 1 tsp Lemon Juice
- Coriander Leaves for garnishing
Step By Step Guide
Saute Crackle Fennel Seeds
Heat oil in a pan, and add fennel seeds and fry until they crackle up. This process is necessary to enhance the flavour of the dish.
Saute Onions And Spices
Add onions, curry leaves, green chillies in the same pan and saute for about 10 mins until golden brown. Cook till the rawness of the onion is fully gone and aromas come out from it.
Add Spices Then Chicken
Add all the spices mentioned in the ingredients with ginger-garlic paste. Cook until they are mixed and combine properly. Then add chicken tossing well with the cooked masalas.
Cook The Chicken
Cover and cook the chicken for 30 minutes until the chicken it cooked through. Cook for more few minutes letting the masalas to dry the coat around the chicken.
Add Black Pepper
Add in black pepper at the end, after the chicken has been cooked. Toss and stir properly to incorporate the the flavour of pepper in the chicken.
Add Lemon Juice
Add lemon juice in the chicken and garnish it with coriander before serving.
