Ingredients

  • 1.5 cups poha (flattened rice)

  • 1 small onion finely chopped

  • 1 small potato diced (optional)

  • 1 green chili chopped

  • ½ teaspoon mustard seeds

  • ½ teaspoon turmeric powder

  • 1 teaspoon sugar (optional)

  • 1 teaspoon salt (or to taste)

  • 2 tablespoons peanuts

  • 8-10 curry leaves

  • 1 tablespoon oil

  • Juice of ½ lemon

  • 2 tablespoons chopped coriander (for garnish)

Step By Step Guide

Prepare The Poha

Rinse the poha under running water in a colander until soft. Let it drain completely and fluff it gently with a fork. Add turmeric, sugar, and salt to the poha and mix lightly. Set aside.

Cook The Base

Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Add peanuts and sauté until they turn golden brown. Toss in curry leaves, green chili, and chopped onions. Sauté until the onions turn translucent. If using potatoes, add them now and cook until they soften.

Mix & Serve

Add the soaked poha to the pan and mix well. Stir gently to avoid breaking the rice flakes. Cook for 2-3 minutes on low heat, allowing the flavors to blend. Turn off the heat and squeeze fresh lemon juice over the poha. Garnish with chopped coriander and serve hot.

Pro Tips

Use thick poha for a fluffier texture. Thin poha can turn mushy. Adjust spice levels by adding more or fewer green chilies. For extra flavor, top with sev or grated coconut before serving. Serve poha with a side of masala chai for a classic Indian breakfast experience.
