Ingredients
- 2 cups cooked rice
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- 1 teaspoon chana dal
- 2-3 green chilies
- 8-10 curry leaves
- 1 teaspoon turmeric powder
- 2 tablespoons fresh lemon juice
- 2 tablespoons roasted peanuts or cashews
- Salt to taste
- Fresh coriander leaves chopped (for garnish)
Step By Step Guide
Cook The Rice
If not using leftover rice, cook rice and allow it to cool completely.
Prepare The Tempering
Heat oil in a large pan or wok over medium heat. Add mustard seeds and let them splutter. Add urad dal and chana dal, sauté until golden.
Add Aromatics
Toss in green chilies, curry leaves, and turmeric powder. Stir for 30 seconds to release the aroma.
Mix With Rice
Now pour this tempering mixture in the cooked rice.
Add Lemon Juice And Peanuts
Add lemon juice – about 1.5 to 2 tablespoons. Add the fried peanuts and cashews.
Garnish And Serve
Add salt as required and mix very well. Garnish with fresh coriander leaves. Serve immediately with yogurt, pickle, or papad for a complete meal.
