Ramadan is just around the corner and Iftar menu is already a hot topic of discussion and one of the ceremonious dishes that are often cherished is Dahi Phulki. It is an ultimate Ramadan comfort food that is light, refreshing and flavourful and easy to prepare. Spongy Phulkis made with gram flour soaked in tangy yogurt is the perfect way to satisfy your taste bud after a long fast.
Ingredients
- For the Phulkis: 1 cup besan (gram flour)
- 1/2 tsp salt
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/2 tsp cumin seeds
- 1/2 tsp baking soda
- Water as needed (for batter)
- Oil for frying
- For the Yogurt Mixture: 2 cups thick yogurt
- 1/2 cup cold water
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp roasted cumin powder
- 1/2 tsp chaat masala
- 1/2 tsp sugar (optional)
- 1 green chili finely chopped (optional)
- For Garnish: 1 tbsp fresh coriander chopped
- 1 tsp red chili powder
- 1/2 tsp roasted cumin powder
- 1 tbsp tamarind chutney (optional)
Step By Step Guide
Prepare The Phulkis
Mix besan, salt, red chili powder, turmeric, cumin seeds, and baking soda in a bowl and water. Whisk it until it turns into a smooth & thick batter. Heat oil in a pan and drop small spoonfuls of batter into it and fry until golden brown and crispy. Remove it and to drain the excess oil, put it in a paper towel for a while. Soak the phulkis in warm water for 5 minutes and then gently squeeze out the excess water
Prepare The Yogurt Mixture
In another bowl add yogurt, water, salt, cumin powder, chaat masala, and sugar and whisk it until it turns smooth.
Assemble The Dahi Phulki
Add the soaked phulkis into the yogurt mixture and let it sit for 10 minutes to absorb flavors.
Chill, Garnish & Serve
Chill for 15 minutes before serving for the best tasteand garnish with red chili powder, roasted cumin powder, fresh coriander, and tamarind chutney.
