These Indian donuts are made with urad dal and seasoned with spices for a burst flavour. Here is a recipe to make restaurant style medu vada at your home and savour into the South Indian Cusine. Pair it with coconut chutney and sambar for the ultimate breakfast treat.
Ingredients
- 1 cup urad dal (black gram lentils)
- 2 tbsp rice flour (for extra crispiness optional)
- 2-3 green chilies finely chopped
- 1-inch ginger grated
- 2 tbsp coconut finely chopped (optional)
- 1 small onion finely chopped (optional)
- 1 tsp crushed black pepper
- 1 tsp cumin seeds
- A few curry leaves chopped
- A pinch of hing (asafoetida)
- Salt to taste
- Water as needed
- Oil for deep frying
Step By Step Guide
Prepare The Batter
Soak Urad Dal Overnight or for 4 hours. Drain the water and grind it into a thick paste, add very little water if needed. Transfer the mixture into a bowl and mix it well to make it fluffy and airy. Add green chillies, ginger, coconut, onions, black pepper, cumin, curry leaves, hing, and salt.
Shape The Vadas
Moist your hands and take a small portion of batter and shape it into a ball. Flatten it and make a hole in the center to make it look like a donut.
Fry The Vadas
Heat oil in a deep pan. Fry the shaped Vadas gently until it turns golden brown and crispy, flipping it occasionally. Take out the Vadas and keep it in the paper towel to drain excess oil.
Serve
Serve the hot Vadas with coconut chutney and sambhar and enjoy!
