Method:-
- Add the maida, whole wheat flour, salt, sugar, and olive oil to a large bowl. By hand, thoroughly combine.
- If desired, add oregano and chilli flakes. To produce a soft dough, thoroughly combine all the ingredients. When necessary, stir in a few teaspoons of warm water to bind and knead the dough.
- Take it out of the bowl, put it on a level, dry surface, and knead it there for about 5 minutes. Return the dough to the bowl once it is smooth, then cover it with a moist cloth for 30 to 40 minutes.
- After that, spread the dough out onto the work surface, give it one last knead, and then divide it into equal portions. Roll one dough ball by flattening it first. Keep a moist cloth covering the bowl of dough you are not using.
- Preheat your oven to 360 degrees Fahrenheit in the interim (180 degrees C).
- The dough should be rolled out until it reaches roti-like thinness.
- Sesame, nigella, caraway, flax, and/or additional paprika seeds can be added on top.
- To lightly press the toppings into the dough, lightly pass the rolling pin over it once more.
- The dough should be sliced into long rectangles or triangles using a sharp knife.
- Transfer the shapes with caution to a baking sheet that has been coated with olive oil or covered with butter paper. Make sure there is room between each of them.
- For 15-20 minutes, or until golden brown, bake the dish. Before removing the crackers from the tray, let them cool for about 10 minutes.
- With hummus, baba ganoush, tzatziki, or just a simple garlic cheese dip, enjoy your lavash crackers.
