Chocolate Gujiya Recipe: A modern spin on a traditional Holi sweet. Chef Savio of the JW Marriott transforms the classic holi recipe (gujiya) into a whole new dish. Sweet maida dumplings filled with khoya and chocolate chips, deep fried in ghee, and topped with freshly made chocolate syrup. This one is for all the chocolate lovers out there.
Chocolate Gujiya Recipe: Ingredients
- For the dough:
- 1 cup Flour
- 3 tbsp Ghee(clarified butter)
- to taste Salt
- 1 cup Water
- For the filling:
- 2 cup Mava (condensed milk)
- 2 cup Sugar
- A pinch of Cardamom powder
- 1/2 cup Chocolate chips
- For frying Oil
- to dip the gujiyas Sugar syrup
- For garnish:
- 250 gram Cream
- 250 gram Fine chocolate
- 50 gram Cardamoms
Method
- Mix in the flour, ghee, and salt. Mix all together to make a dough, then gently add water to produce a hard dough and set aside for 30 minutes.
- In a separate pan, brown the mava (condensed milk), then add the sugar and continue to cook. Then stir in the cardamom powder.
- When the mixture has cooled, stir in the chocolate chunks.
- Take a small piece of dough and roll it out evenly. Cut it into smaller pieces with a moulder or katori, remove any excess dough, and fill it with the ingredients.
- Seal the edges with water. Then, using a fork, fold the edges inside.
- And fry till its golden brown
- Meanwhile, in a bowl, combine fine chocolate and fresh cream, and microwave for 2 minutes at the lowest setting, stirring every 30 seconds.
- Dip the cooked gujiya in sugar syrup.
- Place them on a platter, drizzle with chocolate syrup, decorate with cardamom, and serve.
