Thekua is a traditional sweet delicacy, one of the most important items of prasad which are made during Chhath Puja or Sun God worship during the Hindu festival. This crispy, cookie-like treat is made using simple ingredients like whole wheat flour, jaggery, sugar, and ghee and a hint of fennel seeds, mixed along with grated coconut to bring in added flavor. Deep fried to a golden brown color gives it a sweet taste that is very slightly crispy for a bite.

Expert Tips

Consistency of Dough: Ensure the dough is firm but pliable; too soft dough may cause the Thekua to break during frying.

Frying Temperature: Keep the oil at medium heat to avoid burning the Thekua. Frying on low heat helps achieve a crunchy texture.

Jaggery Variation: For an extra deep flavor, use unrefined jaggery. Adjust the sweetness by adding more or less according to taste.
