Chakki Ki Sabzi Recipe: You must have always eaten wheat porridge or halwa made of wheat flour. But have you ever eaten a vegetable made of wheat flour? This is such a vegetable that after eating it, you will even forget to eat paneer.

Even today, if a guest comes to Marwar, his first demand is for Chakki’s vegetable. Chakki ki sabzi is considered to be a special flavor of the kitchen of former royal houses. So let’s know how to make this delicious vegetable and you can make it very easily at your home.

Chakki Ki Sabzi Recipe: Ingredients

Wheat flour – 4 cups,

Oil – 3 to 4 tbsp,

Cumin – ¼ tsp,

Cinnamon – 1 inch,

Black pepper – 7 to 8 pieces,

Clove – 3 pieces,

Black cardamom – 1 piece,

Hing – ½ pinch,

Tomato – 2,

Green chili – 2 (finely chopped),

Ginger (piece) – ½ inch,

Turmeric powder – ½ tsp,

Coriander powder – 1 tsp,

Kashmiri red chili powder – 1 tsp,

Kasoori methi – 1 big spoon,

Curd – ¼ cup, Malai or cream – ¼ tsp,

Salt – 1 tsp, Garam masala – ¼ tsp,

Coriander leaves – 2 tbsp (finely chopped),

Sugar – ½ tsp,

Baking soda – ¼ Tsp,

Sesame seeds – ¼ tsp,

Ghee – 1 tsp

Method

First of all, take 4 cups of flour in a utensil and knead the dough by adding water as required and now keep the dough aside for half an hour to set. After half an hour, wash the dough by filling it with water in another vessel and wash the dough until the flour stops dissolving in the water (after doing this 4 to 5 times, the flour will stop dissolving in the water).

After this, the remaining dough is kept for 10 minutes by pressing it with a heavy object to set, so that its water gets drained. Now cut the chakki into 4 to 5 pieces and put water in a vessel on the gas to boil, when the water starts boiling, put the pieces of chakki in the water and cook on medium flame for 20 minutes. After 20 minutes, the chakki will double in size in water, then take out the pieces from the water and cut them into small pieces.

Now heat 2 tbsp oil in a pan and fry the grind pieces till they turn brown. After this, now prepare vegetable masala and for that heat 2 tsp oil in a pan or pan and then add ¼ tsp cumin, 1 piece bay leaf, 1 inch piece of cinnamon, 7-8 black peppercorns, 3 Add clove seeds, 1 big cardamom (peeled) and ½ pinch asafoetida and lightly roast these whole spices.

After this, make a paste of 2 tomatoes, 1 green chili and ½ inch ginger and put the paste in a pan and roast it on a low flame, when the spices start boiling, add ½ tsp turmeric powder, 1 tsp coriander powder, 1 tsp Add 1 teaspoon Kashmiri red chili, 1 teaspoon Kasuri fenugreek (crushed) and roast the spices.

When the oil starts separating from the roasted spices, add ¼ cup of curd. And after adding curd, roast the spices till it starts boiling (keep stirring the spices after adding curd). After this, add ¼ cup of cream to the spices. And after adding cream, roast the spices for some more time.

Add 1 cup of water to the spices and after adding the water. Add fried chakki. Salt as per taste, ¼ tsp garam masala and cover the vegetable and cook on medium flame for 6-7 minutes. After this, your hot flour mill curry is ready. Chapati, parantha, poori made of this vegetable flour looks very tasty to eat with anyone.
