Chaitra Navratri 2023: India celebrates the nine-day Hindu festival of Chaitra Navratri with great fervour and devotion. The festival is centred around the veneration of Goddess Durga and her various incarnations, and the word “Navratri” means “nine nights” in Sanskrit. Many individuals observe fasts during this auspicious period as a means of purifying their bodies and souls.

Chaitra Navratri 2023 recipes

It’s essential to eat wholesome, nourishing foods that will give the body the energy it needs during fasting. Rajgira, another name for amaranth, is a wholesome and gluten-free grain that is frequently eaten in India when people are fasting.

Amaranth Chivda: Ingredients

  • 4 cups puffed amaranth (rajgira) seeds
  • 2 tbsp oil
  • 1/2 cup raw peanuts
  • 1 cup sliced dry coconut (kopra)
  • 12 curry leaves (kadi patta)
  • 1 tsp finely chopped green chillies
  • 1 tsp chilli powder
  • salt to taste

Method

Rajgira chivda is prepared by heating the oil in a large non-stick skillet, adding the raw peanuts, and sautéing for 2 minutes over a medium flame.

Slices of coconut can be added and sautéed for one minute over a medium flame.

Over a medium temperature, add the curry leaves and green chilies, and sauté for one minute.

Salt and chilli powder should be added, combined, and cooked for 30 seconds over a medium burner.

Cook on a medium temperature for 2 to 3 minutes, stirring regularly, after adding the puffed rajgira.

The rajgira chivda should be cooled before being stored in an airtight container or used as needed.
