Butterscotch Blondies: Ingredients
- ⅓ cup butterscotch morsels
- 2 tablespoons half and half
- 2 large eggs
- 1 cup brown sugar
- ¼ cup butter (melted)
- ¼ cup canola oil
- 1 teaspoon vanilla
- ¾ cup whole wheat flour
- ¾ cup all purpose flour
- ¾ teaspoon baking powder
- ½ teaspoon salt
- ½ cup pecans (chopped)
Recipe
Preheat the oven to 350 degrees Fahrenheit. Grease an 8 or 9-inch square baking dish.
Combine butterscotch chips and half & half in a medium microwaveable bowl.
Microwave for 45 seconds, stirring every 15 seconds, until the chocolate is melted.
Add the eggs, brown sugar, oil, melted butter, and vanilla extract and beat on high for 2 minutes.
In a medium mixing bowl, combine the flours, baking powder, and salt.
Just until combined, fold the flour mixture into the butterscotch mixture. Fold in the pecans.
Bake for 35-40 minutes, or until a toothpick inserted into the centre comes out clean, in the prepared pan.
